Tropical Carrot Cake

Ingredients
- 1 carrot cake mix dry
- 1/3 cup water
- 4 eggs
- 1 3 1/2 oz. pkg. vanilla instant pudding
- 1/3 cup oil
- 1/2 cup nuts
- 1 8 1/4 oz. can crushed pineapple, undrained
- 1/2 cup coconut
- Optional: Cream cheese frosting Cool Whip, or ice cream
Instructions
- Put all ingredients in a bowl and mix well. Pour into greased and well floured 13x9” pan. Bake at 350 degrees for 40-50 minutes. Cool. Frost with cream cheese frosting or serve with Cool Whip or ice cream.
