Upside Down Cake


  • 1/3 cup butter
  • 1/2 cup brown sugar
  • Fruit of choice
  • 2 eggs
  • 2/3 cup sugar
  • 6 Tbsp. fruit juice
  • 1 tsp. vanilla
  • 1 cup sifted flour
  • 1/3 tsp. baking powder
  • 1/4 tsp. salt


  • Melt butter and brown sugar. Pour into 9x9 baking dish. Preheat oven to 350 degrees. Arrange drained fruit in attractive pattern on the butter and brown sugar. (Ex. pineapple, peaches or apricots garnished with nuts, coconut, cherries, etc.) Beat eggs until lemon colored. Gradually beat in sugar. Beat in the juice all at once. Add vanilla. Sift the dry ingredients together and beat into wet mixture all at once. Pour batter over the fruit. Bake for 45 minutes at 350 degrees or until a toothpick in the center comes out clean. Immediately turn upside down on a serving tray or cookie sheet. Let rest a few minutes before removing from baking dish.
