Zucchini Bread

Ingredients
- 3 eggs
- 1 cup vegetable oil
- 2 tsp. vanilla
- 2 cups sugar
- 2 cups zucchini cut in small pieces
- 3 cups flour
- 1 tsp. salt
- 3 tsp. cinnamon
- 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1 cup chopped nuts optional
Instructions
- In a blender, combine eggs, oil, vanilla, sugar, and zucchini. In a mixing bowl, combine flour, salt, cinnamon, baking powder, baking soda, and nuts. Stir first mixture into second. Pour into greased loaf pans. Bake 1 hour at 325 degrees. Contributor’s note: I sometimes make really small loaves or muffins.
