Zucchini Bread

Ingredients
  

  • 3 eggs
  • 1 cup vegetable oil
  • 2 tsp. vanilla
  • 2 cups sugar
  • 2 cups zucchini cut in small pieces
  • 3 cups flour
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup chopped nuts optional

Instructions
 

  • In a blender, combine eggs, oil, vanilla, sugar, and zucchini. In a mixing bowl, combine flour, salt, cinnamon, baking powder, baking soda, and nuts. Stir first mixture into second. Pour into greased loaf pans. Bake 1 hour at 325 degrees. Contributor’s note: I sometimes make really small loaves or muffins.
