Zucchini Casserole
Ingredients
- 3 med. zucchini
- 3 cups soft bread crumbs
- 1/2 cup grated Cheddar cheese
- 1 small onion
- 3 tsp. dry parsley
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 eggs
- 2 Tbsp. oleo
Instructions
- Boil zucchini in salt water 5 minutes; drain. Add rest of ingredients, except butter; dot butter and cheese on top and bake at 350 degrees for 30 minutes.
