Zucchini Casserole

Zucchini Casserole

Ingredients
  

  • 3 med. zucchini
  • 3 cups soft bread crumbs
  • 1/2 cup grated Cheddar cheese
  • 1 small onion
  • 3 tsp. dry parsley
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 eggs
  • 2 Tbsp. oleo

Instructions
 

  • Boil zucchini in salt water 5 minutes; drain. Add rest of ingredients, except butter; dot butter and cheese on top and bake at 350 degrees for 30 minutes.
