Zucchini Casserole

Ingredients
  

  • 3 cups zucchini diced
  • 1 1/2 cups Ritz cracker crumbs about 30
  • 3 eggs beaten
  • 1/4 cup oil or a little less
  • 1/2 tsp salt
  • 1 cup milk
  • 1 sm. jar pimento or green pepper
  • 2 cups shredded Velveeta cheese or cheddar cheese

Instructions
 

  • Mix well in order. Bake at 300 degrees for 30-40 minutes.
