Zucchini Casserole

Ingredients
- 3 cups zucchini diced
- 1 1/2 cups Ritz cracker crumbs about 30
- 3 eggs beaten
- 1/4 cup oil or a little less
- 1/2 tsp salt
- 1 cup milk
- 1 sm. jar pimento or green pepper
- 2 cups shredded Velveeta cheese or cheddar cheese
Instructions
- Mix well in order. Bake at 300 degrees for 30-40 minutes.
