Zucchini Casserole

Ingredients
  

  • 1 pkg. Stove Top Stuffing
  • 1 stick oleo
  • 1 cup shredded cheddar cheese
  • 1 onion chopped
  • 1 cup carrot grated
  • 4 cups zucchini grated
  • 3 eggs
  • 1 cup mushroom soup
  • 1/3 cup milk
  • 1/2 cup mayonnaise

Instructions
 

  • Saute onions, carrots and zucchini in oleo. Add to stuffing mix. Beat eggs. Add soup, milk and mayo. Combine with stuffing in 9x13 baking dish. Bake at 350 degrees for 45 minutes. This can be frozen and baked as needed.
