The Best Carrot Cake

Ingredients
  

  • Cake:
  • 2 cups flour
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 cups sugar
  • 1 1/2 cups Wesson oil
  • 1/2 cup crushed nuts
  • 3 cups grated carrots
  • 4 eggs
  • Frosting:
  • 8 oz. cream cheese
  • 1 box powdered sugar
  • 1/2 stick butter or oleo
  • 2 tsp. vanilla

Instructions
 

  • Mix all ingredients for cake, adding the eggs last. Bake at 350° for 40 minutes. For frosting, combine ingredients and beat well using an electric mixer. Frost cake when cool!

Notes

Note: This is a family recipe that was passed down from my mother-in-law, Laurine Frese. Laurine was an excellent cook and my husband has requested THIS cake for every birthday since we’ve been married. That adds up to almost 55 birthday cakes for Dan! I have tried other cakes, but none are as good or as easy to make as this!
